Pickled Indian gooseberry


Pickled Indian gooseberry  
 

I won’t go into the details about the health benefits of Indian gooseberry . I am here to help you relish Indian gooseberry [amla in hindi]. I was told time and again that it is very healthy and I should eat one but its citrus taste somehow made me spit it out on every attempt . When none of tried and tested methods proved helpful I improvised …….. and here is the recipe a simple but yummy one ….. that is if you like pickles ….

Ingredients :
Indian gooseberry [amla] – ½ kg
Black  mustard seeds – 4 tbsp
Fennel  seeds – 2 tbsp
Turmeric – 3 tbsp
Salt – 3 tbsp
Red chili powder – 3 tbsp
Asafoetida – 3 tbsp
Sugar – 2 tbsp
Mustard oil – 8 tbsp


Preparation :
1.       Slice  gosseberry  [amla] into 5 or six parts using  the lines to guide . Remove  the seeds and discard .

2.       Add salt  and  sugar  and  place  it  in  a  glass jar. Do not use metal containers.

3.       Roast  black mustard seeds , fennel  seeds , turmeric powder , asafetida and red chili powder . Run the mixture in grinder  for a fine powder [or coarse as desired]of the above ingredients.

4.       Add  this  mixture  to  your  sliced  gooseberry  and  leave  it  covered  overnight [24 hrs].

5.       Heat 8 tbsp mustard oil in a pan and when you can smell the fumes of mustard oil remove from stove and let it cool .

6.       Add  the  oil  to  your  pickled  gooseberry  and  mix  it  evenly. Leave it over night [24 hrs].

 
Its ready to serve .
