Pickled Indian gooseberry


Pickled Indian gooseberry  
 

I won’t go into the details about the health benefits of Indian gooseberry . I am here to help you relish Indian gooseberry [amla in hindi]. I was told time and again that it is very healthy and I should eat one but its citrus taste somehow made me spit it out on every attempt . When none of tried and tested methods proved helpful I improvised …….. and here is the recipe a simple but yummy one ….. that is if you like pickles ….

Ingredients :
Indian gooseberry [amla] – ½ kg
Black  mustard seeds – 4 tbsp
Fennel  seeds – 2 tbsp
Turmeric – 3 tbsp
Salt – 3 tbsp
Red chili powder – 3 tbsp
Asafoetida – 3 tbsp
Sugar – 2 tbsp
Mustard oil – 8 tbsp


Preparation :
1.       Slice  gosseberry  [amla] into 5 or six parts using  the lines to guide . Remove  the seeds and discard .

2.       Add salt  and  sugar  and  place  it  in  a  glass jar. Do not use metal containers.

3.       Roast  black mustard seeds , fennel  seeds , turmeric powder , asafetida and red chili powder . Run the mixture in grinder  for a fine powder [or coarse as desired]of the above ingredients.

4.       Add  this  mixture  to  your  sliced  gooseberry  and  leave  it  covered  overnight [24 hrs].

5.       Heat 8 tbsp mustard oil in a pan and when you can smell the fumes of mustard oil remove from stove and let it cool .

6.       Add  the  oil  to  your  pickled  gooseberry  and  mix  it  evenly. Leave it over night [24 hrs].

 
Its ready to serve .

Pickled Green Tomatoes


Pickled Green Tomatoes

Preparation time – 15 min
Ingredients :
Green tomatoes – 5 medium sized
Yellow mustard finely grounded – 2 tbsp

Turmeric – 2 tbsp
Salt – 2 tbsp

Red chili powder – 2 tbsp
Asafoetida – 2 tbsp

Sugar – 1 tbsp

Mustard oil – 4 tbsp

Preparation :

1.       Chop  green tomatoes finely for ready to eat but for long time use cut the tomatoes into four equal parts .

2.       Add salt  and  sugar  leave it aside for few minutes.

3.       Heat mustard oil in a pan and when you can smell the fumes of mustard oil remove from stove and add asafetida and turmeric powder . Let it cool down .

4.       Add the mixture to chopped tomatoes . Leave it over night .

 
Its ready to serve .

I love to eat it with dal – chawal [dal - rice].

Cucumber salad


Cucumber  and  sesame  salad


Preparation  time – 10 mins
Ingredients :
Cucumber – 1  medium  sized
Sesame seeds – 3 tbs
Tamarind  pod – 1 big
Sugar – 1 tsp
Salt to taste
Mustard seeds – 2 tsp

Green chili – 1
Serves  1 .



Preparation :
1. Peel  the cucumber  and  chop  finely . Add  a  dash  of  salt  and  sugar . Cover  and  leave  it aside  while  you  are  preparing  the  paste .
2. Make  a  smooth  paste   of  sesame  seeds  [3 tbs] , tamarind  pod [1  pod  unshelled  and  deseeded ]  mustard  seeds [1 tsp] , green  chili , 1 tsp  of  sugar  and  salt  to  taste  in  the  grinder.
3. Now  add  this  sesame  paste  or  chutney  to  finely  chopped  cucumber .
4. Heat  2  tsp  oil  in  a  tadka  pan  and  add  mustard  seeds  to  splutter . Add  the  tadka  to  the  salad .Its  ready  to serve .
